Wild Weekend: Random Recipes: Empanadas

Empanadas originate from Spain, but they are documented as being from Argentina. Either way, they are a tasty food to eat during lunch or dinner! Here’s the recipe 🙂

1 pre-made pie crust or Empanada Wrappers (Goya)
1-cup ground beef
1-2 tbsp. chopped onion
1/8 tsp. Salt
1/8 tsp. pepper
1/4 tsp. cumin
2 tbsp. tomato sauce
1-2 tbsp. raisins and/or
1-2 tbsp. chopped hard boiled egg and/or
1-2 tbsp. sliced olive and/or
1/2 cup shredded cheddar cheese

  1. Preheat Oven to 425*
  2. In a skillet, brown ground beef, until brown and no pink remains
  3. Add onion, salt, pepper, and cumin, cook until onion is clear
  4. Add tomato sauce and allow to simmer on low for about 5 minutes
  5. Remove from pain and with a slotted spoon, place into a mixing bowl
  6. Add olives and/or raisins and mix well
  7. On a lightly floured breadboard, roll empanada dough slightly (if using pie crust use a knife and cut dough into 4 inch squares or cit with a custard cup)
  8. Pace a heaping tablespoon of filling onto each dough and add 1-2 tbsp. of cheese if desired
  9. Moisten edge with water and fold and seal
  10. Bake on parchment paper for 10 minutes
  11. Remove and serve
